COVID-19 – Advice for Customers

Gnocchi with Chorizo Bolognese

Ingredients:
500gms mince
1 Chorizo, diced
2 cloves garlic, crushed
1 onion, diced
6 tomatoes, diced
½ red capsicum, diced
½ Zucchini, diced
1 cup danish feta, diced
1 cup basil, chopped
Olive oil
Salt and pepper
Mancini Gnocchi

Method:
Heat oil in frypan, sauté onion, garlic and chorizo until soft. Add mince and cook until brown. Add tomatoes, capsicum, zucchini and cook for 15 mins over medium heat. Add feta, basil, salt and pepper and cook for a further 5 mins. Serve with Gnocchi and fresh parmesan.

Roasted Maple Pumpkin Salad

Ingredients:
2 cups jap pumpkin, peeled and diced
2 Tbsp maple syrup
1 cup Danish fetta, diced
½ red onion, sliced
2 Tsp sesame seeds
¼ cup pine nuts, toasted
4 cups spinach leaves

Dressing:
2 Tbsp olive oil
1 Tbsp honey
1 Tbsp lemon juice
1 Tbsp whole grain mustard

Method:
Toss pumpkin through maple syrup, bake in 180 degree oven until soft.
Place all ingredients in a large bowl, drizzle with dressing and toss together gently.
Season with salt and pepper.

Serves: 4

Mumbai Mango Dip

Ingredients:
1 cup mango flesh
½ cup chopped chives or spring onions
½ cup chopped mint
200g cream cheese
150g Danish feta
1 tsp Whittington’s Exotic Indian curry powder – more if you wish

Cooking Method:
Place all ingredients in a kitchen whiz. Blend until smooth. Serve with Turkish bread, biscuits or crudités.

Serves: 3 to 4
