Chicken Stir Fry

1 x packet Mt Barker Free Range Tenderloins
3 cups chopped Bok Choy
Approx. 125mls (or to your taste) your choice of stir fry sauce
2 cups red capsicum, chopped
1 tablespoon garlic, chopped
2 cups leeks, sliced
1 teaspoon ginger, chopped
1 cup Premium Salted Cashews
2 carrots, sliced
Splash Olive Oil
1 packet Benjamin Noodles of your choice, washed in cold water and drained
Heat oil in a wok. Add all ingredients except sauce and noodles. Stir fry for a few minutes or until vegetables are cooked to your liking. Add stir-fry sauce and Benjamin Noodles. Stir through until noodles are well coated and dish is fragrant. Serve immediately.
