Minestrone Soup

2 onions, chopped
1 garlic clove, diced
6 rashers of bacon, chopped (optional)
1 tblspn olive oil
6 tomatoes, diced
3 celery sticks, diced
2 large carrots, diced
1 zucchini, diced
4 small potatoes, diced
1 tblspn fresh basil, chopped
1 x 500g packet JC’s Italian Soup Mix Premium (soaked overnight)
2L vegetable stock
½ pack Mancini pasta
Extra olive oil, basil and grated parmesan to serve
Sauté the onion, garlic and bacon in olive oil until softened and beginning to caramelise. Add vegetables, soup mix and vegetable stock then bring to the boil and reduce to a simmer for 1½ hours. Add the pasta and cook for a further 5 minutes or until the pasta is cooked. Season to taste then serve with a drizzle of olive oil, basil and parmesan.
Serves: 4-6
