Ingredients:
8 of your favourite potatoes
1 ½ cup shredded tasty cheese
½ cup grated parmesan
2 cups “Farmers Market – Easy Bolognese Sauce” (See previous recipe)
Topping Mix:
½ cup fresh breadcrumbs
1 cup Tasty cheese
½ cup parmesan
Salt and Pepper to taste
Method:
Preheat the oven to 180°. Place the potatoes in an unlined and un-oiled baking tray then roast in a hot oven until very tender. Remove and set aside to cool. Once cool, slice in half along the equator.
Then using a spoon, scoop out the insides being sure to leave a shell of at least 1cm. Mash the scooped potato with the tasty cheese and parmesan. Add the Bolognese sauce to the mix and stir to combine. Fill the potato shells with the mixture.
Mix all the topping mix ingredients in a bowl until just combined. Generously cover each potato with topping mix. Place potatoes back in the oven until cheese is golden.
