Pan-fried Sausage, Tomato & Onion Breakfast

8 sausages of your choice chopped
2 cups brown onion, sliced
3 cups tomatoes, diced
½ cup flat leaf parsley
2 tablespoons olive oil
Salt & pepper, to taste

Heat a frying pan and add the olive oil. Sauté the onions & sausages until brown. Add the tomatoes, salt & pepper and simmer until thickened. Stir through parsley and serve on crusty Turkish bread for a great breakfast.

Serves: 3-4
