Ingredients:
8 Chicken thighs
8 fresh plums or apricots – halved, seeds removed (use dried prunes or apricots if needed)
4 garlic cloves – sliced
3 Tb soy sauce
1 red chilli or red capsicum – sliced
2 tablespoon brown sugar
Method:
Preheat oven to 200 degrees C. Put chicken in baking dish and drizzle with oil, salt and pepper. Roast for 30 minutes, turning after 15 minutes. Arrange fruit, capsicum and garlic around chicken and drizzle over the sugar, Soy and extra three tablespoons of water, then roast for a further 15 minutes. Remove from oven, baste the chicken and fruit with the pan juices and allow to rest for 10 minutes. Serve with fresh coriander and rice or noodles… and enjoy!
