Ingredients:
1 kg of broad beans in their pods (approx.)
1 tablespoon olive oil
1 teaspoon of butter
2 large brown onions diced
1 pack of Mondo Doro hot Chorizo chopped
8 ripe tomatoes or 1 x 800gm can of tomatoes
¼ cup flat leaf parsley chopped finely
¼ cup fresh basil chopped finely
Method:
Remove the broad beans from their pods and put aside. Heat a large pot and add the oil and butter and sauté the onions until golden brown. Add the chorizo and stir for about 5-10 minutes until all the spicy flavours are mixed, and then add tomatoes and a dash of water. (If you are using fresh tomatoes you will need to simmer for at least half an hour.) Canned tomatoes will take 5 minutes, then stir through the beans and simmer for 5 to 10 minutes. Stir through the fresh basil and parsley and serve with Turkish bread that has been warmed in the oven till crispy.
