Zucchini & Asparagus Slice

Ingredients:
6 large eggs or 8 small eggs   
1 cup grated cheese
1 cup milk
2 zucchinis, grated and drained  
2 bunches asparagus  
250g bacon diced
1 large red capsicum, diced     
Salt and pepper to taste

Method:
In a baking tray place your bacon, zucchini and capsicum. Place in a moderate oven for 10 minutes so it just cooks. Meanwhile beat your eggs and milk together. Add the seasoning. On top of the bacon mix lay one bunch of the asparagus on top. Top the asparagus with the grated cheese. Lay the remainder of the asparagus on top of the grated cheese and cover with the egg mix. Bake in a moderate oven for about 50 minutes or until set and golden brown.

Serves: 4
