Ingredients:
2 Cups plain flour
2 Dessert spoons baking powder
3 Dessert spoons sugar
1 teaspoon white vinegar
3 Dessert spoons vegetable oil
Milk to make a thick batter
1 egg
3 – 4 ripe bananas mashed with fork
Method:
Combine flour, baking powder and sugar in a bowl.
Blend oil, egg, vinegar and some milk together and add to flour mix. Whisk through adding extra milk to make a thick batter. Fold through mashed banana.
Allow to sit while you heat a non stick fry pan, add a dob of butter and pour an amount onto the pan and allow bubbling, flipping.
Serve with fresh fruit, cream or maple syrup.
