Avocado & Bacon Breakfast

Ingredients:
2 Ripe Avocado Peeled and sliced
2 Ripe Avocado peeled and mashed
500 gm. Budget Bacon
4 Slices Turkish bread
1 cup Tasty Grated Cheddar
Rocket optional
Extra Virgin Olive Oil
Salt & pepper for seasoning

Method:
Cook bacon in frypan on medium heat. 
Mix mashed avocados, I teaspoon olive, season with S & P.
Spread Turkish bread with mashed avocados portion evenly. Divide grated cheese and place on top. Top with warm bacon. Place under grill or in oven till cheese melts. Remove top with sliced avocados serve while warm. 
Easy peasy!
