2 large tomatoes, coarsely diced
1/2 sweet onion, diced
2 tablespoons olive oil
1 tablespoon diced fresh oregano
1 teaspoon diced fresh basil
2 teaspoons diced fresh parsley
½ teaspoon crushed Garlic
250g loaf Italian bread, cut into 2cm slices
Preheat oven to 200 degrees C. Gently fry bacon in warm pan till cooked. Keep Warm.
In a medium bowl combine tomatoes, onion, garlic, olive oil, oregano, basil and parsley.
Place bread on a baking tray and top with tomato mixture. Bake in preheated oven for 8 to 10 minutes or until bottom of bread is browned. Allow to cool 5 minutes before serving with bacon.
