Sausage Bake

8 slices white bread, crusts removed & flattened
8 eggs
8 sausages of choice
¼ cup melted butter
½ red onion finely chopped
½ cup cream
½ cup grated cheese
Olive oil

Preheat oven to 180 degrees & lightly grease an ovenproof dish.  Place onion, garlic & olive oil in a pan & sauté until the onion is tender. Cook sausages until browned. Brush bread slices with melted butter  and line an ovenproof dish with  bread, brown in oven for 10 minutes.  Whisk eggs and cream together lightly in bowl while bread is browning. Cut the cooked sausages into pieces. Place the cut sausages, onion and garlic into the bed of bread and pour in the egg mixture, top with cheese and return to oven for 40 minutes.
Serves: 6-8
