Crusted Parmesan Cauliflower

½ Head Cauliflower
2 Cups Fresh Breadcrumbs
½ Cups Parmesan Cheese
2 Eggs 
Salt and pepper to Taste
Splash of Welly Boot Extra Virgin Olive Oil

Cut Cauliflower up into florets. Beat eggs lightly. Mix Parmesan Cheese and Breadcrumbs together in a separate bowl. Add your seasoning to your dry mix. Dip your cauliflower florets into the beaten egg the straight into the breadcrumb mix to coat completely. Pan fry gently in Extra Virgin Olive Oil until golden brown. Excellent entrée or side dish.
