1 pack Mt Barker chicken drumsticks
2 tblspns olive oil
Salt & pepper
2 onions, sliced
1½ cups dried apricots
Toss the drumsticks with the oil, salt and pepper Place into a baking dish and scatter over the onion and apricots. Cover with foil and place into a 180° oven for 1 hour then remove the foil and place back into the oven for 15 minutes to brown.
