Chicken Sweetcorn Soup

1 kg Chicken Drumsticks
4 cups sweet corn kernels
2 Ltrs Chicken stock
2 Cloves garlic, chopped
2 eggs, beaten
5cm ginger, grated
1 Tbsp oil
Salt and pepper, to taste
Spring onions, sliced to serve

In a pot heat oil, add onions, garlic and ginger. Sauté until soft. Add chicken drumsticks and cook for a few minutes. Add corn, stock, salt and pepper. Simmer for approx. half an hour or until chicken is cooked. Take drumsticks out of pot ad remove chicken meat. Slice finely and add back to the soup. Whisk the beaten eggs through the soup, serve with sliced spring onions. 

Serves: 4-6
