Breakfast Sausage Casserole

8 beef sausages
500gm bacon, sliced finely
1 cup mushrooms, chopped
1 red onion, diced
½ red capsicum, diced
4 tomatoes, diced
4 eggs, boiled and diced
1 Tbsp olive oil
Salt and pepper, to taste

Place sausages and bacon on separate trays in oven, cook until brown. In a pan heat oil and add onion, cook until soft. Add capsicum, mushroom, tomatoes and salt and pepper, simmer for 15 minutes. Add bacon and sausage, and mix together. Gently mix through egg. Serve with toast or Turkish bread.

Serves: 4-6
