250g Packet Huon ‘Salmon to Go’ Deli Pack
¼ cup milk
¼ cup chopped Flat Leaf Parsley
2 Punnets of Cherry Tomatoes
¼ cup Welly Boot Olive Oil
Salt & pepper, to taste
8 slices of white bread
Place tomatoes on baking tray with olive oil & salt and pepper. Place in a moderate oven for 10 minutes or until tomatoes split and caramelise. In a large bowl lightly beat the eggs and milk together until well combined. Season with salt & pepper & fresh parsley. Pre-heat a non stick frying pan with a light rub of butter. Dip each side of bread into the egg mix until well coated on both sides. Place bread straight into the warm pan. Cook until golden brown on both sides of the bread. (2-3 minutes). Top French Toast with Huon Salmon, and Caramelised Cherry Tomatoes.
