Ingredients:
8 slices white bread
6 eggs
¼ cup milk
Salt & pepper, to taste
2 cups baby spinach
1 cup chopped mushrooms
1 tbls Welly Boot olive oil
Method:
In a large bowl lightly beat the eggs & milk together until well combined. Season with salt & pepper.
Preheat a non stick frying pan with a light rub of butter. Dip each slice of bread into the egg mix until well coated on both sides. Place bread straight into the warm pan. Cook until golden brown on both sides of the bread. This should take approx 2-3 mins. Keep warm sauté mushrooms with splash olive oil adding baby spinach stir till wilted .serve on your toast. Serve with crispy bacon rashers.
