Ingredients:
6 chicken thighs, cut into thirds
1 dried chorizo sausage, sliced
1 red capsicum, chopped
1 green capsicum, chopped
1 red onion, chopped
6 Royal Blue potatoes, chopped fairly small
4 cloves garlic, crushed
½ tblspn Whittington’s paprika smoked or sweet
½ tsp salt
3 tblspns olive oil
½ lemon, juiced
2 tblspns parsley, chopped
Method:
Place the chicken, chorizo and veggies into a large, lined baking dish. Mix together the garlic, paprika, salt and olive oil and massage this into the chicken, veggies and sausage. Cover the dish and place into a 180° oven for 30 – 40 minutes or until the chicken is cooked through. Remove the cover and sprinkle over the lemon juice. Place back into a 250° oven to let everything brown up a little. Serve with parsley.
