Ingredients:
½ loaf of sliced bread
Softened butter
6 rashers of bacon
12 eggs
Salt & pepper
½ cup grated cheddar
4 tomatoes thickly sliced
Method:
Butter bread on both sides then lay it in along the bottom and sides of a medium sized baking dish making sure the slices overlap slightly. Lay bacon rashers across the base and place in a 180° oven for 5 – 10 minutes until the bacon is just starting to cook and the bread is golden. Whisk together the eggs with salt and pepper and pour this into the baking dish. Give the pan a shake so the egg distributes evenly. Sprinkle over the cheese and the place the tomatoes slice across the top. Place back into the oven and bake until set approx. 30 – 40 minutes.
