2L vegetable stock
1 pack Italian soup mix (soak overnight)
½ pack Mancini pasta
3 celery sticks, diced
2 large carrots, diced
2 onions, chopped
1 zucchini, diced
¼ cauliflower, chopped
1 garlic clove, chopped
1 dessert spoon fresh basil, chopped
Sauté the onion, garlic and bacon (optional) until brown and caramelising. Add vegetables, soup mix and vegetable stock. Bring to the boil, then simmer for 1 ½ hours. Add seasoning to taste. Stir in pasta at the last minute.
