Bacon & Cacciatore Tomato Breakfast

1 cup of Budget Bacon chopped
1cup chopped Mondoro mild Cacciatore
2 cups brown onion, sliced
3 cups tomatoes, diced
½ cup flat leaf parsley
½ cup tasty grated cheddar cheese
2 tablespoons olive oil
Salt & pepper, to taste

Heat a frying pan & add the olive oil. Sauté the onions & bacon until brown add cacciatore sauté further 5 minutes. Add the tomatoes, salt & pepper & simmer until thickened. Stir through parsley and cheese & serve on crusty bread of your choice for a great breakfast.
