1 pouch of Butter Chicken simmer sauce
1 can coconut milk
2 brown onions chopped
2 red capsicum sliced
Dob of butter
2 chicken breasts cubed
Sprig of coriander
Brown the onion and capsicum in the butter till caramelising. Make sure it’s nice and brown to give a richer flavour! Add the cubed chicken and stir through till browned. Add the Rogan Josh sauce and the can of coconut milk. Simmer for 10 minutes and then serve on a bed of rice. Garnish with some fresh coriander for colour and flavour.
