Ingredients:
4 Field Mushrooms de stalked
1 cup of grated cheddar
250 grams ricotta
1/2 jar Crunch Preserves tomato relish
5 spring onions chopped finely
2 tbsp chopped fresh parsley
Salt and pepper
Sprinkle of parmesan cheese.
Method:
Pre-heat the oven to 250 degrees. Mix together cheese, spring onion, salt and pepper, relish and parsley. Place mixture inside the mushrooms caps, sprinkle with the parmesan cheese. Place into the hot oven for 15 minutes and serve immediately. Great as an entrée or as a side to a main meal.
