Ingredients:
1 tablespoon butter
1 clove garlic
1/2 onion, chopped
4 leaves kale, finely shredded
4 potatoes, cooked and mashed
1 cup grated cheddar
¼ cup plain flour
1 egg, beaten
½ teaspoon Dijon mustard
Salt and pepper
Bacon & sour cream
Method:
In a frying pan melt the butter and sauté onion and garlic until tender. Next add the kale and place a lid over the pan. Cook until kale is tender. Remove from heat and allow mixture to cool slightly before adding to a bowl with the rest of the ingredients. Lightly stir together until just combined, taking care not to over work the mixture. In a frying pan, spoon a couple of tablespoons of the mixture making a flat pancake shape. Cook till brown, then turn and repeat & remove when cooked. Serve with slices of bacon and sour cream.
