400g Coconut Milk
300ml Whipping Cream
2 tbs Maple Syrup
10 Fresh dates pitted & chopped
1 pinch nutmeg
1 tbs melted butter
1 packet Croissant (alternatively fruit bread )
Beat eggs, cream, coconut milk, maple syrup together with nutmeg.
Place chopped dates in bottom of baking dish, pour mixture over dates. Cut croissant in half and butter both sides. Gently place buttered halves of croissants onto the top of the mixture.
Bake in the oven at 140 degrees for approx. 1 hour. Serve with King Island double cream.
