Radish & Carrot Salad with Orange Dressing

1 bag baby spinach as a salad bed
1 bunch of fresh radish, tops and root removed and washed and sliced very finely
2 carrots sliced into julienne pieces
1/3 cup finely chopped mint
Rind of 1 orange grated
200 grams of sheep or goats feta cubed
½ cup sultanas

1 cup fresh squeezed orange juice
1/3 cup olive oil
Pinch of salt and ¼ teaspoon of fresh ground pepper
1 teaspoon honey
Mix all together and set aside.

Toss all the salad ingredients together and serve with the dressing at the last minute. 
As an option you can sprinkle with Chia . 

Serves: 4-6
