2 large chicken breasts
½ cup lemon juice
2 tblspn Dijon or seeded mustard
3 cups fresh breadcrumbs
2 tsp fresh or dried Italian herbs
2 tblsp grated parmesan
Salt & pepper
Melt the butter, then whisk in the lemon and mustard. In a separate bowl mix together the breadcrumbs, herbs, parmesan and a pinch of salt and pepper. Cut the chicken breast into 1.5cm thick slices then dip each piece first in butter and then in the breadcrumb mix. Place on baking paper lined trays and bake in a pre-heated 200° oven for 15 minutes. Serve with dijonnaise, tartare or sweet chilli sauce.
