8 large figs
3-4 tablespoons honey
½ cup slivered almonds
1 cup mascarpone
1/3 cup thickened cream
Preheat oven to 180 degrees & lightly grease an oven proof dish with butter. The butter will help the figs caramelise during cooking.
Cut figs into quarters BUT only halfway down, leaving the base attached. Figs should be able to be fanned out. Stand the figs upright into the greased dish & drizzle with honey. Place in the oven & cook for approximately 10 mins or until soft.
Whisk mascarpone & cream together until well combined. Remove figs from the oven & spoon a dollop of cream mixture into the middle. Top with a sprinkle of almonds & a light drizzle of honey.
