Ingredients:
8 Tatura peaches, chopped, stone removed 1/2 cup sugar
200g softened butter
½ bag muesli of your choice (we use Gabby’s in-store muesli)
½ cup plain flour
2 tablespoons maple syrup
1 cup thickened cream
2 tablespoon cornflour mixed with water into a paste.
Method:
Place the peaches in a casserole dish, and stir the maple syrup through. Don’t add any water. Cover and steam in the microwave until tender. Thicken the juices by adding the cornflour paste to the peaches, heating again in the microwave. When it’s thickened up stir through the cream and put aside. In a large bowl, mix together the butter, plain flour, muesli and ½ cup sugar until crumbly. Spread on top of the peaches and bake at 200 degrees until topping becomes golden brown. Serve with King Island double cream or Harvey Fresh custard.
