Smashed Red Potatoes

Ingredients:
4 to 6 whole red potatoes 
½ cup South Cape butter melted
2 tablespoons grated parmesan cheese
Salt and pepper to taste
Pinch of nutmeg

Method:
Place the potatoes into a pyrex baking dish and microwave until soft.  Smash the tops down with a fork or masher exposing the flesh, then pour the butter over the potatoes and sprinkle with parmesan, nutmeg and salt and pepper. Place in a pre-heated oven 250 degrees and bake until the top is crunchy and golden brown.  

Serves: 4-6
