Bubbling Belly Pork Roast

1 packet of scored pork belly roast
1 tblspn Rice Bran oil
1 tsp salt

Massage the oil and salt into the pork belly. Place into a paper lined baking tray, cover with foil and roast in a 150° oven for 3 hours. Remove the pork from the oven to rest for at least 10 minutes. Meanwhile, increase the oven to 250° and when at temperature place the pork back in for 15 minutes uncovered, or until the crackling is blistered and bubbling. Serve with your favourite roast veggies or salad.
