Ingredients:
8-10 eggs
5 slices ham or bacon, diced
5 sm mushrooms, sliced
1/2 capsicum, diced
Handful grated cheddar cheese
4 tsp light cottage cheese
1/3 block feta cheese, crumbled
5 cherry tomatoes, halved
Splash cream
Salt and pepper
Olive oil spray
Method:
Preheat oven to 180. Spray a shallow frypan with olive oil spray. Add ham, mushrooms, cherry tomatoes and capsicum and fry until lightly browned. Pour into a lightly olive oil sprayed shallow rectangular pyrex dish. Arrange evenly in bottom of dish. Sprinkle the feta over the top of ham mixture.
In a separate bowl, lightly beat eggs. Add salt and pepper and splash of cream. Stir. Pour egg mix evenly over top of ham mixture. Add teaspoons of light cottage cheese and poke into egg mixture. Sprinkle grated cheddar over top. Bake for 20 mins or until set.
