Lamb Cutlet French Quickies

1 tray of French Cutlets
250gm butter
½ cup lemon juice
2 tablespoon Dijon or seeded mustard
3 cups fresh breadcrumbs
2 tablespoon fresh mint
2 tablespoon grated parmesan
Salt & pepper

Cooking Method:
Melt the butter, then whisk in the lemon, mint and mustard. 
In a separate bowl mix together the breadcrumbs and parmesan and a pinch of salt and pepper. 
Dip each cutlet first in butter mix and then in the breadcrumb mix. 
Place on baking paper lined trays and bake in a pre-heated 200° oven for 15 minutes and serve.
