COVID-19 – Advice for Customers

Chicken Schnitzel with Avocado and Haloumi

Ingredients:
1 packet chicken schnitzels
Dob of butter
1 Avocado
180g South Cape Haloumi in Brine sliced thick
Salt & Pepper to taste 
2 tbls Wellyboot Extra Virgin Olive Oil

Method:
Heat your frypan and add butter and oil. Cook the schnitzels until golden brown on each side. Remove from pan and place in an oven proof baking dish. In the same fry pan, fry up your haloumi until it has just changed colour. Top your chicken schnitzel with haloumi and a slice of avocado.
 Pop into a pre heated oven on 200 degrees for approx 5 – 8 minutes or until avocado and cheese is warmed. Serve with a fresh salad.

Serves: 4-6

Chicken Schnitzel Caesar Salad

Ingredients:
3 chicken schnitzels cooked and then chopped into bite sized pieces
Cos lettuce, enough to fill your choice of salad bowl
Small red onion finely sliced
1 cup of croutons, either your own home made or bought
4 hard boiled eggs, peeled and chopped
Caesar salad dressing of your choice
½ cup Shaved parmesan cheese 

Method:
Layer all ingredients together and toss with the dressing at the last minute.  

Serves: 4

Chicken Schnitzel with Capsicum Cashew & Feta

Ingredients:
1 packet Chicken Schnitzels
Dob of butter
1 tub Wattle Valley Chunky Red Capsicum Cashews and Feta
Salt & Pepper to taste
2 tbls Wellyboot Extra Virgin Olive Oil
1 cup Shredded Cheddar
4 tbs Parmesan Cheese

Method:
Heat your frypan and add butter and oil. Cook the schnitzels until golden brown on each side. Remove from pan & place in an oven proof baking dish. Smear thinly a small amount of Chunky dip over each schnitzel, top with equal amounts of grated cheese and 1 tbs parmesan cheese on top. Pop into a pre-heated oven on 200 degrees for approx 5 – 8 minutes or until cheese is melted. Serve with a fresh salad.

Serves: 4-6
