COVID-19 – Advice for Customers

Glazed Meatloaf

Meatloaf Ingredients:
1kg beef mince
1 tblspn olive oil
1 tblspn Worcestershire 
1 onion chopped
½ cup grated cheddar
3 cloves garlic crushed
1 cup fresh breadcrumbs
½ cup grated parmesan 
2 tblspns parsley chopped
2 eggs, whisked
3 tblspns basil chopped
Salt & pepper
2 tblspns tomato paste
1 medium carrot, grated

Meatloaf Method:
Heat the oil in a frypan and sauté the onion and garlic until tender. Add this to a large bowl with the rest of the meatloaf ingredients and 1/3 cup of the glaze mix. Mix everything together thoroughly (this works best if you use your hands).  Shape the mixture into a loaf and place on an oven tray. Brush the top with ½ the remaining glaze and bake for 45 minutes. After 20 minutes, brush with glaze again and return to oven. Slice and serve with fresh garden salad.

Glaze Ingredients:
½ cup tomato sauce
¼ cup Worcestershire sauce
1/3 cup BBQ sauce
2 tablespoons white vinegar
2 tablespoons brown sugar

Glaze Method:
Combine all ingredients together in a bowl.

Banana Pancakes

Ingredients: 
2 Cups plain flour
2 Dessert spoons baking powder
3 Dessert spoons sugar
1 teaspoon white vinegar
3 Dessert spoons vegetable oil
Milk to make a thick batter
1 egg
3 – 4 bananas chopped
Dob of Butter
2 Teaspoons honey

Method:
In a saucepan melt butter and add chopped banana and honey and cook till banana softens. Combine flour, baking powder and sugar in a bowl.
Blend oil, egg, vinegar and some milk together and add to flour mix. Whisk through adding extra milk to make a thick batter. Fold through cooked banana.
Allow to sit while you heat a non-stick fry pan, add a dob of butter and pour an amount onto the pan and allow to bubble then flip. Once cooked serve, enjoy!

Serves: 4

Grandma’s Silverside with white, parsley or mustard sauce

Ingredients:
1 piece of Drover’s corned silverside
1 cup of white vinegar
1 orange sliced into 3 pieces
1 brown onion, halved
2 bay leaves
½ tblspn whole peppercorns

Sauce:
250mls milk
2 tblspns cornflour
1 tblspn butter
Salt & pepper to taste

Options:
1 tblspn parsley, finely chopped or 1 tsp mustard

Method:
Place all of the silverside ingredients into a large pot and add water to cover. Bring to a boil skimming any impurities that float to the surface, then turn down the heat to a simmer for approx 90 minutes or until tender. Add some extra boiling water if the liquid level drops. Once cooked leave in the pot to rest in the liquid for a least 30 minutes or better yet an hour. Serve sliced with the sauce and steamed veggies. Makes 6 serves.

Sauce
Blend the cornflour with a little milk to a paste then heat the rest of the milk with the butter in a pan until almost boiling. Drizzle in the paste stirring constantly until thickened. Leave as a simple white sauce or stir through the parsley or mustard. 

Serves: 4-6
