COVID-19 – Advice for Customers

Scrambled Eggs & Chorizo

Ingredients:
8 eggs
½ cup cream
Salt & Pepper, to taste
½ tblspn butter
Mondo Doro Chorizo sliced
Toast to serve

Method:
Lightly beat eggs and cream together and season with salt & pepper.  Cook chorizo till slightly brown in pan remove keep warm. Melt butter in a small frying pan on medium heat and add egg mixture. Cook until lightly set then fold through as much chorizo to suit taste buds. Using a spatula, fold the edges into the centre of the pan and leave to cook for another 2 minutes. Serve immediately with lots of buttered toast. 

Serves: 4-6

Apple & Rhubarb with Cinnamon Toast

Ingredients:
800 gms Rhubarb
3 Granny Smith Apples
¼ Cup Castor Sugar
½ Teaspoon Cinnamon
Thick Toast
Butter

Method:
Cut Rhubarb and Apple into 2 ½ cm chunks. Put in a saucepan with the Castor Sugar. Cover and cook on low heat until apple and rhubarb break down to desired consistency. (Approx 10-15 minutes) While apple and rhubarb are cooking, toast your bread, butter, and sprinkle with Cinnamon. Keep warm. Serve your warm butter and cinnamon toast with a big dollop of rhubarb and apple mixture. Enjoy!

Caramelised Grape Tomatoes with Fresh Basil Infused Ricotta

Ingredients:
2 Punnets of Grape Tomatoes
Splash of Olive Oil
1 ½ Cups Borrello Italian Style Ricotta 
Handful Fresh Basil leaves Torn
Fresh Warm Toast
Salt and Pepper to taste

Method:
Pre heat oven to 180 degrees. While your oven is heating up drain Borrello Ricotta in a strainer to remove excess fluid. In an oven safe dish place Grape Tomatoes  Olive Oil with Salt and Pepper and pop in the oven to cook for 15-20 minutes. When Ricotta is drained stir though Basil and place on warm toast with caramelised tomatoes and enjoy!
