COVID-19 – Advice for Customers

Mango & Avocado Salad with Prawns

Ingredients:
500 grms Extra Large Shark Bay Raw King Prawns, defrosted
2 avocados, sliced thickly
100 grms mixed mesculin salad mix
1 baby cos lettuce, shredded
1 red capsicum, finely sliced
2 Lebanese cucumbers
2 crushed garlic cloves
¼ cup brown onion, finely diced
½ bottle Bare Crush Mango Chilli Sauce
1 tablespoon extra-virgin olive oil
 
Method:
Clean and shell prawns. Toss in ½ the Bare Crush Mango Chilli Sauce. Warm the olive oil in a pan, add the onion and sauté until opaque. Add the garlic and stir. Add marinated prawns and sauté until prawns are just cooked. Set aside and allow to cool. Halve cucumbers lengthways, deseed & slice. Mix cucumbers, avocados, mesculin mix, cos lettuce, and cucumbers together gently in a bowl. Add the cooled prawns and toss through remaining mango chilli sauce.
 
Serves: 4-6

Sweet & Sour Mango Salad

Ingredients:
½ bag mesculin salad leaves
2 mangoes, diced
2 paprika finely sliced 
2 Lebanese cucumbers diced
½ cup pepita seeds

Dressing:
½ cup light olive oil
2 teaspoons of wholegrain mustard
2 tablespoon honey
Juice of 2 lemons or to taste

Preparation Method:
Arrange salad in layers on a platter. Sprinkle with the pepita seeds and serve with the dressing.

Orange Glory Spring Salad

Ingredients:
3 Navel Oranges peeled and cut into small pieces
4 handfuls of mesculin or baby spinach salad leaf mix
1 red capsicum sliced finely into 1cm pieces
½ cup pepitas or other nut of your choice
100 grams of Tasmanian feta chopped or crumbled.
Cape Naturaliste Caramelized Balsamic vinegar to taste

Preparation Method:
Mix all salad ingredients together and toss with the balsamic at the last minute. Sprinkle with the chopped nuts and serve. 

Serves: 4
