COVID-19 – Advice for Customers

Penne Pasta & Chilli Beef Sauce

Ingredients: 
400g chuck steak, cubed
1 tsp chilli flakes
1 garlic clove, chopped finely
3 tablespoons extra virgin olive oil
Salt & pepper, to season
 
Pasta Sauce
1 small onion, finely chopped
2 cloves garlic
2 x 400g tin Bella Lucia Peeled Tomatoes
2 x 400g tin Bella Lucia Diced Tomatoes
1 cup basil leaves, chopped
3 tablespoons extra virgin olive oil
1 tsp dried oregano
Salt & pepper, to season
 
Method:
In a frying pan, sauté the onion & garlic in the olive oil. Add the tomatoes & stir in the fresh & dried herbs.  Cook on a low heat for 1 hour, stirring occasionally. Season the sauce to your liking.  This can be blended in a food processor if you don’t want it chunky.
Lightly season the meat with salt & pepper. Sauté garlic in an oiled pan & add the beef, cooking until lightly browned. Add the prepared sauce & chilli flakes. Simmer on a low heat until the beef is tender & the sauce has thickened.  Cook pasta as per directions, drain & add to the sauce.
 
Serves: 4

Chilli Con Carne

Ingredients:
1.5kg beef mince
1 tblspn olive oil
2 onions, chopped
4 garlic cloves, chopped
1 ½ tsp ground cumin
1 ½ tsp ground coriander
2 tsps dried oregano
1-2 tsp chilli flakes (or more if you like it hot!)
12 fresh tomatoes, chopped or 2 cans
1 cup of beef stock
1 ½ cups borlotti beans soaked overnight or 2 cans
Mission Corn Chips 

Method:
Heat the oil in a large pot and fry the onion and garlic until tender. Add the beef and cook stirring until browned then sprinkle in the spices and oregano and cook for a further 2 minutes. Finally, add the tomatoes, stock and beans then pour everything into a baking dish, cover with foil and place in a 180° oven for 1 hour and 15 minutes. Uncover then place back in to finish cooking for a further 15 minutes. Serve with corn chips.

Serves: 6-8

Tomato & Bacon Soup (with a hint of basil and chilli)

Ingredients:
2 kg of tomatoes chopped. You may skin them if you wish.
4 brown onions peeled and chopped
250 gms bacon chopped (you can add pre-cooked drained bacon for less fat content)
1 teaspoon lemon pepper
2 tablespoons butter
1 cup fresh basil chopped
Approx 2 litres of chicken stock
¼ teaspoon chilli flakes (or to your liking)

Method:
In a large saucepan sauté the onions slowly in the butter till caramelizing, add the bacon and stir a few minutes, then add the stock, tomatoes and lemon pepper. Cover and cook until the tomatoes are soft.  Bend half of the mixture and place back in with the unblended soup and add the chilli flakes if required, stir and add the fresh basil. Season as required with more lemon pepper or chicken stock to your taste. Serve immediately.
Great with fresh crusty bread.

Serves: 4 to 6t
