COVID-19 – Advice for Customers

Prawn Caesar Salad

Ingredients:
2 slices fresh ciabatta bread
250ml Olive Oil
1 teaspoon garlic, crushed
2 baby cos lettuces, roughly torn
500g cooked prawns, peeled
4 rashers rindless bacon, cooked, chopped
¼ cup grated parmesan, plus extra to serve
½ bottle Café 26 Caesar Dressing
2 soft-boiled eggs, peeled, cut in half
 
To make Croutons:
Preheat oven to 180°. Mix together the olive oil and garlic. Brush over both sides of the bread. Lay on a baking tray. Bake for 10 minutes or until golden and crisp. Allow to cool. Crumble for rustic croutons.
 
To assemble Salad:
Place the cos lettuce in a bowl with prawns, bacon and bread croutons. Add half the salad dressing to the salad and toss to combine.
 
To Plate:
Pile salad into serving bowls, drizzle with the remaining dress and garnish with egg and extra parmesan.
 
Serves: 4-5

Warm Asparagus Breakfast

Ingredients:
20-24 asparagus spears
Salt & pepper, to season
Splash of extra virgin olive oil
3 handfuls spinach leaves
4 Poached eggs to your liking
2 tablespoons parmesan cheese
Café 26 Caesar Dressing
Turkish Bread warmed in the oven

Method:
Snap off the woody ends of the asparagus & lightly season the spears with salt & pepper. Warm a frying pan & add the olive oil. Add the seasoned asparagus & toss lightly until just cooked. Remove from the heat. Poach your eggs to your liking. Place warmed Turkish bread on plate. Top with spinach leaves, followed by the asparagus. Lightly drizzle café 26 Caesar over the spears. Top with your soft poached egg. Salt and pepper to taste.

Serves: 4

Mango Madness Salad

Ingredients:
1 bag cos lettuce, torn or chopped
3 mangoes, diced
3 avocados, diced
¼ cup basil, chopped
1 packet of prosciutto, torn or chopped into small pieces
1 cup croutons
Café 26 Tangy dressing

Preparation Method:
Layer the ingredients in a flat salad bowl in the order listed. Drizzle with the dressing just before serving. Delicious with seafood, salmon or BBQ.

Serves: 6
