Pear & Berry Crumble Dessert

Ingredients:
10 Bosc Pears, cored and sliced chunky style
Approx. 500 grams of berries fresh or frozen
1/2 cup sugar
 400g softened butter
½ bag in store Gaby’s muesli of your choice
½ cup plain flour
2 tablespoons maple syrup
Sprinkle of cinnamon
Sprinkle of nutmeg

Method:
Steam the pears in a large covered casserole dish with a dessert spoon of butter and the maple syrup (approx. 15 to 20minutes). The pears should hold their shape whilst being tender. Fold through the berries while the pears are warm. Sprinkle with the cinnamon and nutmeg.  In a large bowl, mix together the melted butter, plain flour, muesli and ½ cup sugar until crumbly. Put this crumble mix on top of the fruit and bake at 200 degrees until topping becomes golden brown. Approx. 15 to 20 minutes. Serve with cream or custard.

Apple & Berry Strudel

Ingredients:
4 Gala Apples, peeled, cored and sliced & drizzled with lemon juice
½ cup of berries of your choice frozen or fresh
3 dessertspoons sugar (raw if you have it)
½ cup of milk with a pastry brush or 1 beaten egg
3 sheets puff pastry, unfrozen, plastic still on

Method:
Lay the puff pastry (plastic side down) on the work bench and evenly distribute the apples, berries and sugar over the 3 sheets. Brush the long edges of the pastry with milk. Fold the pastry over, removing the plastic as you go and join together the milk brushed edges. Turn the strudel over and place on a baking paper lined tray. Tuck the open edges under and make 3 diagonal slashes on each strudel. Brush with milk and sprinkle with a bit of sugar. Place in a 180 degree oven and bake for approx 20-25 mins or until golden brown. Remove and serve warm with pure cream or custard.

Serves: 3-4
