COVID-19 – Advice for Customers

Banana Pancakes

Ingredients: 
2 Cups plain flour
2 Dessert spoons baking powder
3 Dessert spoons sugar
1 teaspoon white vinegar
3 Dessert spoons vegetable oil
Milk to make a thick batter
1 egg
3 – 4 bananas chopped
Dob of Butter
2 Teaspoons honey

Method:
In a saucepan melt butter and add chopped banana and honey and cook till banana softens. Combine flour, baking powder and sugar in a bowl.
Blend oil, egg, vinegar and some milk together and add to flour mix. Whisk through adding extra milk to make a thick batter. Fold through cooked banana.
Allow to sit while you heat a non-stick fry pan, add a dob of butter and pour an amount onto the pan and allow to bubble then flip. Once cooked serve, enjoy!

Serves: 4

Orange & Cream Cheese Pancakes

Ingredients:
1-1/2 cups Self Raising flour
4 tablespoons white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup softened cream cheese 
1-1/2 cup butter milk
1/2 cup orange juice
1/4 cup butter, melted
1/2 teaspoon orange zest
Maple syrup 

Method:
In a small bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, softened cream cheese, butter milk, orange juice, butter and orange zest. Stir into dry ingredients just until mixed through. Pour batter by 1/4 cup full onto a greased hot pan; turn when bubbles form on top. Cook until the second side is golden brown. Serve with maple syrup.

Serves: 12 pancakes

Sweet Corn & Bacon Fritters

Ingredients:
1 cup plain flour
1 tablespoon baking powder
600ml buttermilk
2 eggs, lightly beaten
8 rashers bacon, chopped
¼ cup grated cheese
3 corn cobs, kernels shucked
60gm butter, melted and cooled
Salt & pepper
Extra butter for cooking

Method:
Sift the flour and baking powder into a bowl. Stir through the sugar and make a well in the centre. Whisk the milk and eggs together and pour into the well in the dry mix. Stir until combined and smooth. Allow to sit for 30 minutes then drizzle in melted butter and stir to combine. Meanwhile, cook the bacon until beginning to crisp then set aside to cool. Stir the bacon, corn, grated cheese, melted butter, salt and pepper into the batter. Heat a non-stick fry pan over medium, add a smidge of butter and allow to melt. Drop in ¼ cup portions of batter and cook until the bottom has browned, 3-4 minutes. Carefully flip and cook for another minute.

Serves: 6-8
