Ingredients:
1 R2E2 mango sliced into bite-sized pieces
2 punnets grape tomatoes halved
6 spring onions chopped finely
2 firmish avocados sliced
200 grams of diced and cooked bacon (optional)
Bed of baby spinach or baby cos leaves
Café 26 Oriental dressing
Method:
Layer all ingredients together on the bed of salad leaves.
Drizzle with the dressing at the last minute and serve.
Serve: 4-6.
