COVID-19 – Advice for Customers

Creamy Chicken with Leek & Mushrooms

Ingredients:
6-8 chicken thighs chopped 
2 leeks rinsed and sliced finely
1 tblspn butter
4 cups of swiss brown mushrooms whole
½ cup of chicken stock
300ml thickened cream
Salt and pepper
Cornflour paste* optional
Rice, pasta, cous cous or crusty bread to serve

Method:
Heat a large pot and melt the butter.  Add the leeks and stir till golden brown and tender, approx 15 minutes. Add the chicken and stir through till coloured. Add salt and pepper and transfer to a large casserole dish with lid.  Add the mushrooms and the chicken stock. Seal and place in 180 degree oven for approx 40 minutes or till chicken is cooked.  Remove and stir through the cream. Thicken with the cornflour paste if desired, and serve with rice, pasta, cous cous or bread to mop up the juices.

Serves: 4-6

Continental Warm Salad with Caramelized Balsamic Vinegar

Ingredients:
1 red capsicum chopped into long slices
1 red onion chopped 
1 eggplant quartered and sliced
1 cup of swiss brown mushrooms
1 punnet of grape tomatoes
1 zucchini quartered and sliced 
1 teaspoon freshly chopped garlic
2 tablespoons Welly Boot olive oil
½ cup chopped basil
Splash of caramelised balsamic vinegar
Salt and pepper to taste
Baby spinach to cover your serving platter.

Method:
Toss all vegetables (bar the tomatoes and mushrooms) in the olive oil, basil and garlic. Season generously with black pepper. Roast in a baking dish for approx 30 minutes at 200 degrees. Remove and add the tomatoes and mushrooms and continue roasting for another 20 minutes.  Cool, and place on a serving dish lined with a bed of baby spinach.  Drizzle with balsamic and sprinkle with freshly chopped parsley. Serve with chunks of freshly toasted Turkish bread. 

Serves: 4-6
