1 tray Pork Ribs (approx. 1kg)
½ bag gourmet potatoes
3 large brown onions, roughly quartered
¼ cup olive oil
1 cup chicken stock
Salt and Pepper
Preheat oven to 180°. Place pork ribs, potatoes and onions in an oven proof dish. Season to taste with salt and pepper. Toss through olive oil, ensuring to coat everything. Pour in the stock. Cover with baking paper and alfoil. Cook for 2 hours. Remove from oven and reduce temperature to 160°. Stir and cook, uncovered, for a further 15 minutes to colour slightly. Place ribs on a plate and spoon over juices. Serve with crusty bread.
