Ingredients:
1.5kg Pumpkin, chopped into bite size pieces
Splash of Olive Oil
2 tablespoons melted butter
1 teaspoon crushed garlic
1/3 cup sweet chilli sauce
300 ml sour cream
½ cup chives or spring onion, finely chopped
1 tablespoon Cajun Spice
Salt and Pepper to taste
Method:
Preheat oven to 220°. Toss the chopped pumpkin in the olive oil, garlic, Cajun spice and butter in a baking tray lined with baking paper. Roast pumpkin in over for approx. 45 – 60 minutes. Mix together sour cream, chives and sweet chilli sauce. Season with salt and pepper to your liking. Serve as a dip with the pumpkin or serve as a side dish with a meal.

Creole Potatoes with Sour Cream Dressing
Ingredients:
1 punnet Kipfler potatoes cut in halves
Splash of Wellyboot olive oil
2 tablespoons melted butter
1 teaspoon crushed garlic
½ jar of Crunch Tomato Relish
300 ml sour cream
½ cup chives or spring onion finely chopped
Sprinkle of Cajun spice
Salt and pepper to taste
Cooking Method:
Toss the kipfler potatoes in the olive oil, garlic and butter in a kitchen paper lined baking tray, and sprinkle with the Cajun spices. Roast in a 220 degree oven for approx 45 to 60 minutes. Mix together the sour cream, chives and relish, salt and pepper. Serve as a dip with the potatoes or dress the potatoes with the dressing and serve as a side dish with a meal.

Cajun Kipfler with Divine Dressing
Ingredients:
1 punnet Kipfler potatoes cut in halves
Splash of Wellyboot olive oil
2 tablespoons melted butter
1 teaspoon garlic crushed
Salt and pepper to taste
Sprinkle of Cajun spice
Dressing:
Juice of one lemon
Rind of half a lemon
3 tablespoons of cream to thin mayonnaise
1 cup of SW mayonnaise
1 tablespoon finely chopped flat-leaf parsley
4 tablespoons Dijon mustard
½ bunch chives finely chopped
Blend all dressing ingredients together and put aside.
Method:
Toss the Kipfler potatoes in the olive oil, butter, garlic and Cajun spice and place in a kitchen paper lined baking tray. Roast in a 250 degree oven for approx 45 minutes. Serve with the dressing drizzled over or as a dip on the side
