Ingredients:
1 medium zucchini, sliced medium thickness
1 medium sweet potato, sliced thinly
1 red capsicum, sliced thinly
1 medium onion, finely sliced
2 garlic cloves, chopped
6 eggs
½ cup grated cheese, for filling
Extra ½ cup grated cheese, for topping
Salt & pepper, to taste
Method:
Preheat oven to 180 degrees & lightly grease an oven proof dish with the approximate size 18cmx28cm.
Bring to boil a small pot of water. Add to the water in this order – potato, capsicum, onion, garlic & zucchini. Simmer on low until just tender then remove & drain immediately. Spread the boiled vegetables out on baking paper to dry.
Whisk eggs & cheese together in a bowl & season with salt & pepper. Layer vegetables in the prepared dish & pour egg mixture over the top. Sprinkle a layer of grated cheese on the top & bake for approximately 20 minutes or until the mixture is set.
Serve with a side salad of your choice.
