Ingredients:
1 bag Mt Barker Free Range chicken
2 tablespoons olive oil
1 Mondo Doro chorizo mild or hot, chopped
2 cups brown onion, sliced
3 cups tomatoes, diced
Salt & pepper, to taste
½ cup flat leaf parsley
Method:
Heat a frying pan & add the olive oil. Fry the chicken until browned then remove to a plate. Sauté the onions & chorizo until beginning to brown and add the tomatoes, salt & pepper. Simmer for 10 minutes then add the chicken and any juices and cook for a further 30 minutes or until chicken is cooked, adding a little water if it begins to dry out. Stir through the parsley & serve with crusty Turkish bread for a great breakfast.
Serves: 4-6
