Korma Chicken Mild Curry

1 pouch of Korma Sauce Mix
2 brown onions chopped
1 red capsicum diced
1 small sweet potato diced
Dob of butter
2 chicken breasts or thighs cubed
*chicken stock optional

Brown the onion in the butter till caramelised. Add the cubed chicken and stir through till just coloured. Add the spices provided with the packet sauce mix. Stir through and add the diced vegetables and the pouch sauce mix. You can add half a cup of chicken stock if you want more sauce. Simmer for 25 minutes or till chicken is cooked and the sweet potato is tender. Serve on a bed of rice. Garnish with some fresh coriander for colour and flavour.

Serves: 2-3 Adults
