Ingredients:
1 packet of Huon’s Honey Soy or Mango Lemon Myrtle marinated salmon fillets
1/3 punnet Kipfler potatoes
Rind of half a lemon finely grated or chopped
Juice of half a lemon
1 tblspn olive oil
Salt & pepper to taste
Method:
Heat a frying pan on a moderate heat then, to prevent the marinade from sticking, place a large square of baking paper in the base of the pan. Drizzle a little oil on the paper then slide the salmon portions skin side down into the pan. Cook the fillets until they are medium-medium rare approx 5 minutes on the first and 3 minutes on the second side. Meanwhile, slice the Kipfler’s into thick coins and steam or microwave until tender. When they are ready add lemon rind and juice, olive oil, salt and pepper. Serve with a simple green salad.
